10 min Recovery Meal – Pink Eggs

We are repeatedly told about the 20 minute window after a long bike ride, where taking on easily digestible protein is helpful to our muscles ability to recover. I must admit I am partial to a Chocolate High5 Protein Recovery powder if mixed with milk after a 90+ minute ride. I consider them a little reward and they are relatively easy to prepare.

I normally buy my energy gels in Race packs when heavily discounted, so I generally have a small handful of hydration tablets and recovery powders loitering in my cupboard. Earlier this week when I got home after an evening commute / low intensity training session (Strava Bonus Ride) I arrived home around 8pm and I was ravenous. I was running low on milk and couldn’t be bothered to go out to get some and didn’t want to have my protein powder with water (Yuk).

So I came up with something delicious which took me less than 10 minutes to prepare and was satisfyingly tasty. It had carbs to replenish my energy and protein to repair my muscles. I am a big fan of beetroot and have read great things about beetroot Juice for endurance cyclists.

Ingredients

  • 2 Eggs
  • 1 Boiled Beetroot
  • Fresh coriander (alternatively spring onions or garlic)
  • 1 Small Baking Potato
  • Black Pepper

Preparing Pink Eggs

0 to 1 minutes

Jump off your bike, fumble for your keys. lock up your bike and get inside.

1 to 3 minutes

Strip of you riding clothes and get on some warm dry and comfortable garments.

3 to 6 minutes

Grab a small baking potato. Attack it with a fork and put it in the microwave for 3 minutes on full power.

While the potato is cooking get a big bowl and crack two eggs into it. I then opened a pack of boiled beetroot put one in a bowl and the rest to one side. Chop up the beetroot into thin slices and then cross-cut so it looks roughly shredded.

I happened to have some fresh coriander in the fridge, which is a rare occurrence but I recently discovered my Guinea Pigs love the stuff. Tare up the coriander and along with the beetroot shreds combine these with the eggs and whisk.

6 to 9 minutes

Take the potato out of the microwave and put the eggs on full power for 3 minutes.

While the eggs are cooking slice up the potato and add pepper and butter if desired.

At around half way through stir the eggs to help them cook quicker, and not just from the outside edge inwards.

9 to 10 minutes

Take out the solid block of pink egg and shred it, so it looks scrambled. Serve, eat, relax and replenish while you upload your ride to Strava.
